Creamy Spaghetti Squash

When I’m really hungry, I have a tendency to look in my fridge, grab an armful of ingredients, and throw it all together. Sometimes, it turns out really terribly. Those times, I still eat it (come on, I don’t waste food…), I just make a mental note to never do that again. Then there are times when it turns out wonderfully! I’m going to share with you one of those wonderful kitchen surprises today! And hint, hint, it involves one of my favorite foods: spaghetti squash!

This recipe is super easy and super delicious! I’ve had it at least once a day for the past couple days.

Creamy Spaghetti Squash
serves: 1

Ingredients:

  • 1 cup spaghetti squash
  • 1/4 avocado diced
  • 1/2 marinara sauce of choice (I used Trader Joe’s Basil Tomato Marinara)
  • 1 cup spinach
  • 4 egg whites
  • 1 oz Fage 0%
  • salt/pepper to taste

Directions:

  • Wilt spinach, then add egg whites– cook like scrambled eggs
  • In separate pot, add spaghetti squash and marinara
  • Stir in greek yogurt
  • Fold in avocado
  • Add scrambled eggs
  • Mix all together
  • Enjoy!

    Yum. Every time I see a recipe with spaghetti squash I tell myself I am going to buy it and use it and have yet to do so. Must do ASAP!

    There is something magical about creating a good dish in the kitchen!! I loveee spah squash. Before I went vegan my favorite way to eat it was right out of the skin with beans, salsa, cheese, and Fage greek yogurt. SO good!

    I LOVE mixing TJs marinara sauce with Greek yogurt…thick, creamy “blush” that’s wayyyyy healthier and more protein packed! definitely making this asap :)

    Holy yum!! I desperately need to try spaghetti squash. I just never know what squash to buy! Does it matter? I’m the same way when I’m hungry though except that I usually end up pacing my kitchen grabbing cereal until I can think of something haha have a fantastic weekend!

    oh damn, I was just at TJ’s. Wish I read this before so I could grab that marinara! Oh well, I can make this with another kind. Sounds delish though.

        truuuuue that. I always say I’m saving TJs shopping sprees as a treat, but I end up going once a week because I walk past it on my way to my favorite movie theater! hahaha, addicteddddd.

    YUM! I am definitely one who goes to the fridge and throws all my random ingredients together hoping for a creation! I’m all about the spaghetti squash and pasta saue but now I need to try it with greek yogurt and avo!! It sounds amazeballs :)

    Marinara sauce and avocado? Sold! Seriously, this sounds delicious. I’ve actually never had spaghetti squash before, but I’ve had spaghetti if that counts :P
